Lettuce was recently in the spotlight on the August Garden Delights program on HenryTV. Susan Howington, Family and Consumer Science Agent with the Extension Service, made Taco Salad using Romaine lettuce which is her favorite variety for this recipe.

“Lettuce is one of the best low calorie vegetables that you can eat,” said Susan. “It is high in Vitamin A and folate and also fiber.”

Susan’s recipe for the salad includes a twist on the traditional ingredients by using Catalina dressing instead of salsa. Try it out and let Susan know what you think!

Layered Lettuce Salad

1 medium head lettuce, chopped
1 head cauliflower, chopped
1/2 cup chopped onion
1 cup water chestnuts, chopped
1 (10 oz. pkg.) frozen green peas
2 cups salad dressing
1/2 cup sugar
1/3 cup Cheddar cheese
1/2 cup bacon bits

In a large salad bowl, layer the lettuce, cauliflower, onion, water chestnuts and peas. Mix salad dressing and sugar. Pour over vegetables and seal to edge of container. Sprinkle with bacon bits and cheese. Refrigerate overnight. Toss before serving.
