Henry County’s Cooking with Garden Delights

Totally tomatoes is the theme for a southern summer feast and who better than Susan Howington, Family and Consumer Science Agent with the Henry County Cooperative Extension Office, to share her healthy and tasty recipes for two delicious tomato-inspired dishes? Susan is not only a gardening and food safety expert, she is an excellent cook, and can be seen regularly on Garden Delights, a gardening and cooking show that she co-hosts with colleague Frank Hancock, Agriculture and Natural Resource Agent. The show is produced in cooperation with Henry Television, the government access channel of the Henry County Board of Commissioners through the Communications Office.

Started in 2013, Garden Delights combines local gardening tips with simple, delicious recipes, and is peppered with a little humor as well. A new episode is taped monthly, with each program featuring a different fruit or vegetable, and what viewers should be doing in their gardens that month to ensure a bountiful harvest.

Last year, Garden Delights was the recipient of the National Extension Association of Family and Consumer Sciences Communications Award for Tele-vision and Video. Garden Delights airs on Henry Television channel 180 on Charter Cable and channel 99 on AT&T U-verse several times a week and is available on demand through the County’s website at www.henrycountyga.org.

Tomato Zucchini Bake

4 medium ripe tomatoes, peeled and thinly sliced
3 medium zucchini, thinly sliced
3/4 cup grated Parmesan cheese, divided
2 cloves garlic, minced
1 tsp. dried thyme
1/4 tsp. salt (optional)
1/4 tsp. pepper
1 Tbsp. olive oil

Preheat oven to 400º. In 8-inch square baking dish, arrange half of zucchini slices. Top with half of tomato slices. Sprinkle with 1/4 cup cheese.

Top with remaining zucchini and tomato. Sprinkle garlic, thyme, salt and pepper over tomato; drizzle with olive oil. Sprinkle remaining 1/2 cup cheese over top. Bake for 20 to 25 minutes. Makes 6 servings.
