Henry County’s Cooking
with Presidential recipes

  This week, in honor of the Presidential Inauguration we are featuring favorite recipes of president’s past. We hope you enjoy them.

“Lady Bird” Johnson’s Pedernales River Chili
 

4 lbs. chili meat (coarsely-ground round steak or well trimmed chuck)
1 onion (chopped)
2 garlic cloves
1 tsp. oregano (ground)
1 tsp. comino seed
6 tsp. chili powder
1 1/2 cups tomatoes (canned, whole)
2 to 6 generous dashes hot sauce
2 cups hot water
Salt

  Place meat, onion and garlic in large, heavy pan or dutch oven. Cook until light in color. Add oregano, comino seed, chili powder, tomatoes, hot pepper sauce, salt and hot water. Bring to a boil, lower heat and simmer for about 1 hour. Skim off fat during cooking.
