Henry County’s Cooking
with Popsicles

  We all need to cool it, right? Here are some delicious popsicle recipes and I'll throw in a couple for "adult" fun too. You don't have to, but, it is truly worth it to go out and buy some popsicle molds. You can also use ice trays and disposable small cups you just rip off when frozen. Don't forget to buy your sticks for these! It is best to freeze overnight.


Margarita Pops

1 can (10 oz.) frozen Bacardi margarita mixer (This mixer does not contain alcohol and can be found in freezer section of grocery store.)
1/4 cup tequila or you can replace with 1/4 cup water
2 Tbsp. orange liqueur (optional alcohol or you can replace with 2
Tbsp. orange juice
1 tsp. lime zest (outer dark green lightly grated off a lime)
1/8 tsp. salt
1 ice pop mold and sticks 

  In a large pitcher, stir together frozen margarita mixer, 1 can (10 oz) of water, tequila, orange liqueur, lime zest and salt. Stir until mixer is dissolved. Four into ice pop mold and cover. Freeze for 2-3 hours then gently insert wooden sticks. Freeze at least another 4 hours or overnight.
