Henry County’s Cooking with
4th of July recipes

  Whenever we have an invitation to the Hampton home of Dot and Charles Cox, we know that we are in for a delicious meal no matter what’s on the menu! The dessert may be a cake or pie but it will be accompanied by Dot’s favorite - homemade ice  cream. Their recipe quickly became our favorite also because it tastes so incredibly good, not oversweet like bought ice cream, and it takes just a few minutes to get ready for the ice cream freezer. So why not try it out this July 4th and see for yourself.


Red, White and Blue Cake

1 (18.25 ounce) package yellow or white cake mix
1 (8 ounce) container frozen whipped topping, thawed
1 pint blueberries, rinsed and drained
2 pints fresh strawberries, rinsed and sliced 

  Prepare cake according to package directions and bake in a 9x13 inch pan. Cool completely.

Frost cake with whipped topping. Place blueberries in a square in the corner, and arrange sliced strawberries as stripes to make an American flag. Chill until serving. Cake may be frosted with Cool Whipped Topping (recipe follows) instead of plain frozen topping.
